Jackie’s Chocolate Chip Cookies

2 cups all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup (2 sticks) butter, softened
1 cup brown sugar
1 large box instant vanilla pudding
1 tsp vanilla extract
2 large eggs
2 cups semi-sweet chocolate chips

Preheat oven to 350.

Combine flour, baking soda, and salt in small bowl. Beat butter, sugar and vanilla until creamy. Add vanilla pudding mix and eggs. Mix until all combined. Gradually beat in flour mixture. Drop by tablespoons onto ungreased cookie sheet. Bake for 9-11 minutes, or until golden brown. Remove to wire racks to cool.

Pro-tip! This dough will be very stiff. I use a medium ice-cream scoop to make mine.
