Brian’s Famous Cranberry Meatballs

Meatballs
– 2 eggs, beaten
– 1/2 cup dry breadcrumbs
– 1/3 cup minced fresh parsley
– 1/3 cup ketchup
– 1/4 cup finely chopped onion
– 2 tablespoons soy sauce
– 2 garlic cloves, minced
– 1/2 teaspoon salt
– 1/2 teaspoon pepper
– 2 pounds ground beef

Sauce
– 2 cans (16 ounces) whole-berry cranberry sauce
– 1 bottle (12 ounces) chili sauce
– 2 tablespoons brown sugar
– 1 tablespoon mustard (substitute homemade pepper butter, if you have it on hand)
– 1 tablespoon lemon juice
– 2 garlic cloves, minced

In a bowl, combine the first nine ingredients. Add beef and mix well. Shape into 1-inch balls. Place in an ungreased baking pan and bake uncovered at 450 for 8-10 minutes or until no longer pink. Transfer to a slow cooker. Combine sauce ingredients in a saucepan, bring to boil then reduce heat and simmer for around 10 minutes, stirring occasionally. Pour over meatballs and let flavors combine on low for a couple hours. Enjoy!
